Hot cross buns

Tried making my first hot cross buns today- they're out of the oven and look lovely!
The recipe is Paul Hollywood's:

Ingredients:
500g strong white flour
10g salt
75g caster sugar
10g yeast
40g unsalted butter
2 eggs
120ml milk
60ml water
150g sultanas
80g mixed peel
1 apple, chopped
Zest of 2 oranges
2 tsp ground cinnamon
Plain flour and water for crosses
Apricot jam to glaze

The method is as for any bread dough. Place the flour, yeast, salt sugar and butter in a bowl. Add the whisked eggs and half the milk and water, gently warmed. I used a dough hook and mixer to combine everything, then slowly add remaining liquid.

Once all the mix is combined knead for around 5 minutes until it's shiny and bounces back to touch.

Now add the fruit, cinnamon, and zest. Knead again until all combined. The dough will be quite wet now due to the fruit.

Allow to rest in a warm place for about an hour. It will have doubled in size.

Knock all the air out and roll into a sausage. Cut into 12 equal pieces and roll each into a ball. Place them quite close together on baking parchment. Set aside for another hour.

Warm the oven to 180 degrees fan (the recipe states 200 fan but I tend to find my bread burns unless I knock off another 20 degrees so I've stuck to that rule here).

Mix 75g plain flour with cold water in increments until a smooth paste is formed. Pipe the crosses over the buns and bake for 25minutes.

Mix apricot jam with a little boiling water and brush over the buns whilst still warm.
