Christmas spice poached pears

Last Christmas I had a vanilla panna cotta with poached pear as a desert in a restaurant. As the cream is so smooth and soft it was good to have something with texture such as fruit to compliment it, rather than the usual coulis. Yesterday I tried to make my own version and it seems to have worked well!

Ingredients:
- 3 large dessert pears
- 5 cups water
- 1 cup dark rum
 - 2 cups sugar (+/- depending on the taste)
- 1 cinnamon stick
- 1 tsp vanilla essence
- 6 cloves
- handful of raisins/dried fruit  

Recipe:
I made this up as I went along, but here's the general method...
- peel and de-core the pears, cut in half
- add the water, sugar, rum, spices and sugar to a large pan and add the pears
- cover and simmer for 30-40 minutes until the pears are tender
- remove the pears and simmer down the liquid until the consistency of runny syrup (you will see the bubbles change and become more sticky, this can take up to an hour)

 I poured my syrup over the pears and left in an air tight container. This will keep in the fridge for a few days. I've made some vanilla panna cotta to try with these but some creme fraiche or ice cream would work just as well!
