Having had a good run of successful cob loafs, I decided to try to make something we could slice for toast and sandwiches. I bought a large tin from tk maxx a few months ago, and this recipe is the same as I usually use but double quantity. On reflection I probably have too much dough and 800g flour would have probably been perfect!
Ingredients:
-800g strong white flour
-200g strong whole meal flour (this is the combination that's worked for me so I'm sticking to adding a bit of whole meal flour)
-70g butter
-4 tsp sugar
-4tsp salt
-2 x 7g packets of active yeast
-500ml warm water
-100ml milk
Method:
-basically throw all the ingredients in a heavy mixer with a dough hook, but keep the salt on opposite sides to the yeast
-mix on a low setting for around 3 minutes until elastic
-place in a bowl and cover with oiled cling film and leave in a warm area for about 2 hour until doubled in size- mine went a bit crazy as you can see!
-squash out all the air and knead by hand for a minute
-roll into a sausage and fold in the edges and pinch closed underneath
-place in a greased and floured tin
-cover again and leave for 1 hour in a warm area, by when the dough should be growing out of the tin
-heat the oven to 180 degrees C (for a fan oven) and place a container of water in the bottom to create steam
-cook for 40 minutes then allow to cool before slicing!
