I've been trying out warm salad recipes at home and would like to share my favourite...
You will need:
- salad leaves
- sun-dried tomatoes
- red onion, chopped
- peppers- chopped
- asparagus- chopped
- mushrooms- chopped
- avocado
- mozzarella
- salt
- olive oil
- clove of garlic
- +/- roast chicken
- olive oil
- coarse mustard
- balsamic vinegar
- sugar
- salt and pepper
- Fry a drizzle of olive oil, salt and red onion in a pan until soft
- Add mushrooms, peppers, asparagus and crushed garlic and cook
- In a large bowl place leaves of choice, torn pieces of mozzarella, a few sun-dried tomatoes and chunks of avocado
- To this bowl add the warm ingredients
- In a cup, mix 4 tablespoons of olive oil, 3 tablespoons of balsamic vinegar, 1 tablespoon of sugar and 1 teaspoon of coarse mustard, pinch of salt and pepper- check and alter quantities as needed to taste
- pour dressing over salad and toss to mix
- place strips of roast chicken on top if desired
